2 salmon fillets without the bone - check with your fish market to see if the salmon bones are removed or if they can remove them for you

Method
Remove the salmon fillets from your refridgerator at least 20 mins before cooking. This brings the salmon to room temperature so it cookes evenly through
Pre-heat a frying pan on high heat
Drizzle olive oil over both sides of the salmon fillets
Pre-heat your oven to 200 degrees celcius, ready for the bread
Empty the mussels into a large bowl or pot and rinse them a couple of times under water to clean them. Drain the water but leave a little water left to keep them fresh
