Fresh chicken tacos with spicy avocado

Ingredients

  • 2 chicken breasts
  • 6 soft tortillas
  • lettuce, washed
  • 1 tomato, diced
  • 1 red onion, diced
  • 1 tablespoon Sriracha
  • bunch of coriander
  • Salt and pepper
  • Olive oil
  • 1 avocado, diced
  • 1 tablespoon paprika
  • 1 teaspoon Chili powder
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon Garlic powder
  • 1 tablespoon Corn starch/flour (makes the chicken a little crispy)

Method

  1. Pre-heat your oven to 200 degrees celcius, ready for the chicken
  2. We'll create our spice mix.
  3. To a bowl add paprika, chili powder, cajun seasoning, garlic powder, salt and pepper
  4. Dice your chicken breast into bite sized pieces
  5. Line a baking tray with baking paper and spread your chicken out on the tray
  6. Add your spice mix to the chicken, using your hands to mix the chicken well with the spices
  7. Add a generous drizzle of olive oil over the chicken and put it in your pre-heated oven. It should take 10-15 minutes to cook
  8. While the chicken is cooking, you can cut your vegetables
  9. To a bowl, add the avocado, half the diced red onion and a quarter of the diced tomato. Add in your sriracha
  10. Give it a good mix till your avocado turns into a paste, season to taste with salt and pepper
  11. Get ready to serve
  12. Put a saucepan on medium-high heat. Saucepan should be large enough for your tortillas
  13. Toast your tortillas until nice and crisp and now make your taco
  14. This is the order I would do it: chicken, avocado mix, tomato, red onion, lettuce and finish with corainder

I would get served tacos as a kid except it was like the laziest meal. I was expected to make my own taco. Um, excuse me mum, but if you're going to cook for me, I expect it ready to eat.

Also, what used to annoy me is that it would be the hard tacos, so everything would just fall out. Disaster.

Soft tacos are actually more authentic Mexican cuisine. Hard tacos are a Tex-Mex thing. Also, soft tacos are easily to eat because they don't fall to bits. I used to use the Old El Paso taco kits with the pre-made spice and salsa to make this dish. Butm I was up for a challenge, so, naturally I created my own spice mix. It works out cheaper as well.
